As long as the coupler has a gas cut-off on the coupler, yes; you can disconnect and remove the coupler from the keg without turning the gas off. Pull the lever on the coupler upwards until it engages and stops the gas.
If your keg couplers do not have gas cut-ff mechanism, then you should isolate the gas supply at the appropriate point.
Many keg couplers now have a lever that you pull up to stop the gas, and that needs to be depressed after you have connected the coupler.

Renovate your glasses?

9 times out of ten it's the invisible film in the glass in my experience. Even un-nucleated glasses should be able to hold some form of a head with a gassy lager ;)

It is not illegal to sell a product past its Best Before date although as a general rule it is bad practice as the quality comes into question. Ale is a difficult one because so ales will improve with age and survive longer than their Best Before date whilst others do not make it to their best before before they go off.

Quality control is the key factor. What does it taste like. If you think it has gone it has gone It is not worth selling a dodgy pint.

If it is good and people are happy with it then it becomes a matter of your opinion.

Though it is illegal to sell past the Use By and Sell by Date.

I currently use excel beer line cleaner.. Which is clear, would it do any harm to the lines (staining etc) if I were to add food colouring to the cleaner so it's easier to tell when it's cleaner in the line??

Down south it is very much what is ses on the tin. If you want to tip you offer a small tip and usually say something like: there is a little something for you. If you say something like have one on me that is how it is taken. It is often offered in the sence of I would like you to drink it with me now And is seen as rude to refuse without good reason and can often cause offence if you turn a drink down.

And as someone from the south I would have expected that if I offered someone one for themself up north for that to have meant I am buying you a drink. So I have leant something new about drinking up north.

Hope this helps you better understand the north south difference.
