I’m a barmaid in a very small pub. on a good day we can fill our glass washer three times, so usually we only turn it on in the evenings. When I’m on duty, I’ll put used glasses straight into the washer to drain, and once the tray is full I’ll turn the washer on. My landlord says this is wrong, and instead he’ll leave glasses on the bar with a little bit of water in the bottom until there’s enough to fill a tray, which could be several hours at least. I think that it looks gross and breeds flies, so I can’t understand his logic but I’ve not been in the trade very long so don’t know enough. Who’s actually right?
